Hi,
I am looking at going to cooking school when i graduate. I was mainly interested in CIA. I would go with an emphasis on Pastry Arts because I love baking and I have always dreamed of opening a bakery. The only thing is that its far and expensive. Also, the CIA name is good for getting jobs, but I want to open my own shop, so how useful would a prestigious school be to me? What do you recommend? Would you recommend a different baking school or not? Do you think that I should even go to a baking school, or should I focus on the business aspect? Should i take business or like hospitality courses?

I was actually in you're exact position about 4 months ago. I got accepted to both the CIA and Johnson & Wales and I thought the same thing you are thinking; I want to open my own bakery someday so would I really need the CIA as a credential? So I decided to do JWU and moved to North Carolina (scehduled to start this fall). But then I got to thinking, what if I am not able to open my bakery right out of school because of the economy or some other reason and I would need to get a job. Well the CIA has over 300 companies that recruit right off campus, even while you are still a student; the average student has about 3 job offers come graduation. So I decided to go to CIA, its more expensive, and its defianetly not right down the street but we only get one chance at this and we need to make sure we are covering our butts! Things don't always work out as we plan. As far as if you should go to culinary school or get a degree in business I would say that you should do what you love.

What do you need a school for?
Here's the recipe.

Mallorcan Ensaimadas

Prep Time: 15 Minutes
Cook Time:10 Minutes
Ready In: 1 Hour 25 Minutes
Servings: 15

INGREDIENTS:
•5 tablespoons lukewarm milk
•1 1/2 teaspoons active dry yeast
•2 cups bread flour
•1/2 teaspoon salt
•1/4 cup white sugar
•1 egg
•2 tablespoons vegetable oil

DIRECTIONS:
1.In a small bowl, mix together the yeast and milk. In a large bowl, stir together the bread flour, salt and sugar. Make a well in the center, and pour in the yeast mixture. Cover with a light dusting of flour, and let stand for about 15 minutes, until frothy.
2.Stir together the egg and oil, and pour into the bowl with the flour. Mix until the dough comes together then turn out onto a floured surface, and knead until smooth, about 5 minutes. Place in a greased bowl, and cover. Let stand for about 20 minutes to relax.
3.Preheat the oven to 375 degrees F (190 degrees C). Divide the dough into 15 pieces. Roll each piece into a 12 inch long rope. Roll the ropes into a spiral shape, and place on an ungreased baking sheet.
4.Bake for 10 minutes in the preheated oven, or until golden brown.

I kept the book because there is a wealth of information in there for preparing just about anything and pretty much any skill a chef would need.     Liz Latimer, the baker among the district's food service workers, had been hard at work for hours, first baking up a handful of pies, then icing and decorating two carrot cakes that would later be shipped off for one of their catering jobs.

    The food service department at Gloucester County's largest school district is unlike any other.

    Sure, when the crowds come rushing in, they hand out tiny plastic milk bottles and fresh bananas, offering soup and bags of chips.

    But the women of the food service department have also been running their own catering business about 15 years, which spawned the demand for baked goods as well about 10 years ago. The money they make keeps the department mostly self-sufficient.

    Latimer, of Pitman, has been the department's baker for the past five years.

    This time of the year, Latimer is busy baking pies and breads for Thanksgiving and the holidays.

    "We do pretty well," said Latimer as she finished putting the maraschino cherries and walnuts on the top of the carrot cake.

    Skills Needed to Succeed in Baking School

    Although the two fall under the same umbrella concept of working in the kitchen, baking school and cooking school are two very different ideas. Cooking is very much an art form, requiring students to use their imaginations and their taste buds to come up with new, delicious creations. Baking is more like a science, and although there is certainly room for creativity, there is much about baking that has to do with measurements and proportions of ingredients.
