Long story short I moved in with my aunt and I need to start school in a different school district. We're going through the court process for guardianship. The court date will most likely be in 2 months. Does this mean I have to be out of school for 2 months or is it possible that the court and school will work something out until everyone is finalized?

Go enroll in School where you live. There should be no problem unless your parents are fighting the Guardianship or even your living with your Aunt. You don't say how old you are or the circumstances of your living arrangement. If your parents are fighting it and you are under 18 then you will have to abide with what they say until the court decides otherwise. At any rate You should not stay out of school. If the "Adults" can't work this out, then, neither should have Guardianship. All these decisions must be made with your best interest placed first.

Can anybody tell me some recent (within this decade) of interesting court cases, where the student(s) take their school to court dealing with the 1st amendment? Thanks!
I can't think of any off hand because the 1st Amendment stuff and the schools is such settled law and it was all settled more than a decade ago.
The only 1st amendment cases dealing with schools that I can think that might have happened in the last 10 years would be religion cases and I don't think that is what you are looking for.

The only Bryan College I know is in tiny Dayton, TN. It's named for Wm. J. Bryan, who was the prosecutor in the Scopes Trial. It's an extremely conservative Protestant school.
Bryan College is not held in high regard overall; however, if they are offering short courses for jobs, it may be ok.

How about going to the Dollar Store or a home improvement store and getting one of those peel and stick" fake wood tiles". I saw some the other day that looked just like a basketball floor. Then you could paint the lines on it and set up nets. Make bleachers out of popsycle sticks and if you could fine a way to attach cardboard people. Hope this helps. I can picture it in my mind but hard to explain.
