So, I have always loved to make things out of nothing and I have always wanted to learn more about pastry. I am really considering going to Pastry School, but I don't have much skill when it comes to baking. What am I expected to know prior to pastry school?
Go to a bookstore. Find a cookbook called the Good Housekeeping Illustrated Cookbook. It's a fairly thick book, large, and white. Read the entire front part. It's got vocab and tools with pictures, and a good section on pastries.
Reading the introductions to cookbooks will teach you SO MUCH it's ridiculous. Get some pastry and baking books and read their introductions too ( :
I'd love to go to pastry school, but I don't have the time or $$. I haven't been to culinary school either, but I'm more interested in the sweet end of it anyway. I'd like to learn more professional techniques than I can get from watching cooking shows, and have more intense instruction than a quick demonstration. Books help, but you can't see what's going on. DVDs might be helpful, which is why I'm looking for a self-study.
Know of anything?
I already checked CIA; didn't find anything. My schedule does not allow me to attend a course at a local school or college. I have weird hours and can't say that I'm going to be there on tues and thurs from 7 to 10, for example, because I'd only make it half the time.
That's why DVDs would be perfect, but I can't find any.

I can't go to school, never mind full time. I have a job. And other obligations. It's NOT an option.
I am a former chef and wondered how some of these correspondence schools could have a Catering and Foodservice courses in the course outlines, I did a management course and had to send my assignments through the mail, and I am being serious, how to you send a cooking course assignment in the mail a cake would be stale and anything else would be rotten.
My suggestion is find a Community College that has short course, or a night school course from a high school. Try going to the Culinary Institute of Americas website, see if they have any on-line or as you said DVD courses, check the local college for the same issues.
I am seeking America's Best Pastry School. Tuition fees are not a problem, I just want to get to be the best professional cake decorator I can be. Thanks.

I really want to attend pastry school, but I'm not quite sure which ones are the best. I've been looking into The French Culinary Institute in New York, and Le Cordon Bleu in Paris. I would be willing to train anywhere in the world. Suggestions?
the international culinary schools are good. Le Cordon Bleu is award winning so go there! also try looking online and ask some chefs in your area where they went... hope i helped!
