I just got my permit and wanted to go to one of those racing school for fun. Do you get a racing license ? Does the 3 day package include a place for you to stay threw the night?
No driving license required, but you must be able to drive a standard transmission. You pay for your own lodging. The SCCA and NASA recognize the Skip Barber School and give you partial credit towards a racing license, depending on the situation.

Will the Introduction To Racing course which is $595.00 provide me with one. It's the cheapest course. If not that then what will get me a racing license. I need to know because if none of those courses provide an opportunity to race proffesionally then there's no point for me to go to the school.
You don't get a license from Skip Barber. They don't do that, but you can use the school as credit towards getting your license from an organization like SCCA. I'm not 100% sure, but I think the 3 day school is the only program that earns you credit. You don't need a license to race with Skip Barber. Many drivers have a great career just racing in the different Skip Barber series. The whole point of going to school is to learn how to race correctly and get some experience.

After the Long Beach Grand Prix what happens to the Champ Car equipment? How much money are all of these cars worth and could they be used someday maybe for something like the Skip Barber Racing School?
You can "bet yer boots" that every nut, bolt and screw (and anything else that isn't beyond re-use) will find it's rightful place.
Some of the teams are keeping their stuff for the series they are going with, while some of it is probably part of the deal to go to the IRL in one manner of another.
The bottom line is that it will all filter its way to a new home without a moment's hesitation on the part of the owners.
I want to know whether or not I even have a chance at 6ft. 195lbs, or should I just race sports cars. I'm about to go to the skip barber racing school and need to make a decision.
Formula Driver or Formula 1 driver?
If your goal is Formula 1, then you are on the large side. However, out of the long list of things that would need to happen to get to Formula 1, that is probably not the biggest obstacle. But it would be one that would come up if the chance ever presented itself.
But if you mean just driving a Formula car? No issue whatsoever. I am 6'4" and 200# and have successfully raced a few Formula series cars (although I am more often found in GT and sports racers). There are certainly drivers of much larger physical dimensions than I successfully racing out there as well.
The basics of driving and race craft between a sports racer and any number of Formula cars are not different. Some techniques will be better with one than the other, but it's still far more similar than different. And many of the differences will vary as much between different chassis as different car types.
